Market Street’s Corporate Chef Chris Wilson delighted his Celebrity Chefs 2015 auction package winners Dan and Patty Shaw and Paul and Shelah Zmigrosky and their guests with another superbly planned and prepared dinner last month at the Zmigrosky home. With the assistance of his wife Jennifer and Market Street Assistant Kitchen Manager Trever Defelice, Chris began the evening’s five course gastric extravaganza with Butternut Squash Bisque embellished with Pancetta, Parmesan Crisp & Crème Fraiche, followed with Shaved Brussel Sprout Salad topped with Sieved Egg, Pecorino, Marcona Almonds and Meyer Lemon Dressing and served with Far Niente Chardonnay 2013.
Paul Zmigrosky had requested Chris to plan a main course to compliment the magnum of Opus One 96 that he had been saving to share with close friends. Chef Chris wowed the dinner party with an amazing main course of Braised Boneless Short Ribs – Demi Jus with Lobster Medallions and served with Truffled Cream Corn, Roasted Marzano Finger Tomatoes and Crispy Leeks.
To finish the meal, Chris prepared a luscious Honey Lemon Crème Brûlée with a Turbinado Sugar Crust that perfectly complimented the main course, leaving the diners satisfied, but not uncomfortably so. Maybe it was the conversation or perhaps the wine, but the brûlée had been devoured before a photo was taken.
